    Default Chilli sauce recipe

    I just harvested some chillies from the garden.

    This is my quick and easy chilli sauce recipe.

    Anyone else care to share theirs?

    250g birds eye chillies, roughly chopped
    250g cherry tomatoes, roughly chopped
    1/2 cup white sugar
    1/2 cup white wine vinegar
    1/2 bottle red wine for the cook
    Combine chilli, tomatoes, sugar and vinegar in a saucepan over high heat. Bring to the boil. Reduce heat to medium. Simmer, stirring occasionally, for 10 minutes or until sauce thickens slightly. Remove from heat. Stand for 5 minutes.

    Process until smooth. Pour into hot sterilised jars.

    Use on everything!

    I tried to find my fermented chilli sauce recipe, but it seems to have gone awol. It was a beautiful bastard child of Nourishing Traditions, random talk and bucketloads of cayenne chillies.

    Yup, chillies are awesome............until when your halfway through choppin' ' em up you need to scratch the ol' family jewels and forget you're about to introduce ya boys to the worst most...........Shudder.............i can't go on...........Ive not forgotten ever, ever again.

    Introduce spices like cardamon/cloves/fruits/any spices to give this a new dimension. I like experimenting with sauces. I think about how all flavours will come together, the texture and colours and of course taste. Use different type of vinegars and impart different flavours. Add some citric acid at the end as this is a natural preservatives and sauce will keep longer.

    JustEcila, I haven't used this recipe, but it's a reputable ste and it'll give you ideas...
