I have heard Geoff speak and he's a great teacher - not to fast and easy to follow.

Milkwood Permaculture out in Mudgee would be fantastic too, they also do some PDCs in Sydney.
I would recommend joining the WWOOF network to get your hands dirty, maybe Purple Pear here could help you out where you can learn while your doing. Seems a preety cluey guy.
