View Full Version : Cake recipe for pumpkin cake?

I just had the idea to make a pumpkin cake as I have a lot of pumpkins.

I wonder if modifying a carrot cake would be a good idea. I expect a pumpkin cake might be slightly wetter than a carrot cake.

Anyone want to share their most excellent carrot cake recipe here?

Here's a Pumpkin Chocolate mud cake that looks good just adjust it to the ingredients you have.

My neighbour gave me heaps of pumpkins last year, I made heaps of Pumpkin Gnocchi (froze a fair bit and had a few friends for lunch)
just replace half the potato of a regular recipe with mashed roast pumpkin.

Unfortunately, since pumpkin's are one of those really-keen-to-grow veggies, I'm not much of a fan.
After seeing lots of pumpkin cake recipes online, thought I'd hold off on carrot cakes and offer up some random, unasked-for ideas!
A few ways ways I hide it: grated into bread dough, muffins and sweet or savoury pumpkin pie.
Chooks love pumpkins: weirdo crosses get lined up along the chookhouse dwangs and cleavered in half as a special treat.
Great filler in homemade dogfood too.
And of course, there's always the frozen pumpkin, coconut cream and whatever-takes-your -fancy soup. You might be too warm for that kind of thing though.

I did a nice roast pumpkin and feta quiche too
Roast some cubed pumpkins pieces about a 2 cm square
egg,cream, feta, pine nuts
was very good

Thanks for the ideas but i was really keen to get a carrot cake recipe so that i could convert it to pumpkin cake. I know i can find one on the web but i find web recipes can be a bit hit and miss. About 50/50 so far i've found.

Just saw this for Zucchini I'm sure you could substitute what ever you had more of

Courgette cake

Courgettes have the ability to make a cake as moist and sweet as if you added ground almonds to the recipe. So many have asked for this recipe that I can't resist including it.

Serves 6.

200g butter
200g caster sugar
2 eggs
150g courgettes (about 2 small ones)
1 small apple
200g plain flour
a large pinch salt
½ tsp baking powder
pinch cinnamon
60g pecans
80g sultanas (half cup, packed)

Preheat oven at 180C/gas mark 4. Butter and line the base of a loaf tin measuring 20cm x 12cm x 9cm deep. Cream the butter and sugar until light and fluffy. Beat the eggs and mix them in, one at a time, making sure each is fully incorporated before adding the next. Coarsely grate the courgettes and the apple. Squeeze them with your hands to remove any excess moisture, then add to the mixture. Mix the flour, salt, baking powder and cinnamon, and gently fold into the mixture. Stir in the nuts and fruit. Transfer to the lined loaf tin and bake for about an hour, or until golden and firm to the touch. Allow to cool in the tin before turning out.

I've made this a couple of times now, and I just get people raving about how good it is. I do a slight alteration. I don't use pineapple (but it is probably good), and I add raisins (because my mother likes them in there).
